Fry your chicken breasts in oil (or use rotisserie chicken) until golden brown all over; remove from pan and set aside on paper towels to drain off excess fat, then chop into bite-sized pieces or shred with two forks if you prefer something more uniform in size.* Season both sides with salt and pepper—you can also add chili powder or cayenne pepper if desired!

When you are cutting your veggies, you want to make sure they are bite-sized pieces or slices so that they cook faster. That is why you will want to chop them up. Place a lid on the pan and reduce the heat to medium-high. Cook your chicken mixture for another 3 minutes, or until all of the juices have evaporated.

  • Coat each chicken breast with olive oil and season with salt and pepper.
